I have an adult female crestie in a 30-something gallon exo terra, and she is all by herself. Then I have my (pretty much adult) male gargoyle in his own smaller tank. I read that garg x crestie hybrids don't exist, so would it be safe to put them together if I don't want them to produce offspring? Would they cohabitate okay, or would I be better off to keep them separated?

I've heard mixed things about keeping gargs with cresties, but 30 gallons is a decent size. You could try it if they're about the same size or if the crestie is bigger, but I'd still keep a close eye on things.

Gargs can be VERY feisty and are notorious tail-eaters. I'd be curious to hear about your experience with this because I'd love to have a big 40 gal tank with a pair of gargs and a pair of cresties!

People definitely do it, but do not be suprised if your Crested is missing a tail very soon after.  The main thing is, just keep an eye on them and make sure nobody is getting stressed and everybody is eating. Also, make sure they are always around the same size.

I'd love to have a big 40 gal tank with a pair of gargs and a pair of cresties!

I dunno, I'd still be worried that the males may go at it.

Just to update in case anyone was interested, I decided not to put them together. I bought him his own tank. I think he would eat all of her food anyway.
